You might expect that figuring out how to make a candy like a truffle, with its ganaches and enrobings and toppings and all, would take a long time to perfect. By comparison, humble peppermint bark seems simple: just a couple of layers of crunchy chocolate with a smattering of peppermint. How hard could it be to get it right?
Turns out, it's not so easy. It took years of tweaking and nearly a dozen takes on the recipe for the team at Zingerman's Candy Manufactory to get their peppermint bark just right.
The results were worth the wait. Made with a layer of dark chocolate, a layer of white chocolate, and plenty of peppermint candies mixed throughout the chocolate as well as sprinkled on top, this is excellent peppermint bark. Packaged in a sleek black box, it makes a lovely gift—or a fun indulgence.
