Having company and looking for a cheese to feature? Look no further than this blended beauty of cow and goat’s milk from northern Italy.

This orange hued log (thanks to a touch of powdered annatto for coloring) is a washed rind cheese that’s surprisingly soft and easy to approach. In general, washed rind cheeses are funky and strongly flavored, but this young cheese is bright and creamy and smooth with a hint of fun(k) in the finish.

It catches the eye, it’s easy to eat, and will likely be the first cheese to disappear while folks nibble and snack. In that case, better get two.
