Quinta Cheese from Point Reyes

Point Reyes Farmstead Cheese has been producing wheels of (mostly blue) cheese for decades, but for this little wheel they turned away from the blues and focused on the luscious, buttery, spoonable end of the cheese spectrum. These small wheels are wrapped with spruce bark and pressed with bay leaves imbuing their woodsy, deep flavors into the gooey paste of the cheese.

To serve the Quinta (pronounced KEEN-ta), carefully cut a portion of the top from the rest of the cheese and serve with a spoon. It’ll be the star of the cheeseboard as everyone snaps photos of how luxurious and rich it all looks (and tastes).
