Indulgently delicious.

The first time I heard The Clash’s London Calling, I was hooked. Something clicked inside and it sent me down a musical path I enjoy to this day. Around the same time, I first tasted pâté. You see how that ended.

 

This classic terrine from the folks at D’Artagnan—a staple of the specialty food world since the mid-80s—is made from hormone and antibiotic-free duck and pork. This particular style is inspired by the recipes of southwestern France where they like their pâté to be a coarser texture that lets the ingredients shine. The addition of dried plums and Armagnac adds to the texture and balances the savory notes with a touch of sweetness.

 

A bit indulgent, definitely delicious.
