Firsthand Foods partners with small-scale North Carolina farms for their hickory smoked bacon. The pigs are old English heritage breeds including Berkshire, Duroc, and Hampshire that are able to handle the Carolina heat. They live their lives on pasture on the farms where they were born and receive no added hormones, growth promotants, or antibiotics.

The bacon is brined in sea salt and brown sugar and then smoked over hickory wood for a slightly sweet, mildly smoky flavor. Flavorful without being overpowering, it’s a great pick for sauteing with greens or for adding to pasta dishes and stews—or for frying up in the morning.
