Guava Conserve

Ever heard of membrillo? What about the far more descriptive yet slightly misleading “quince cheese?” For the uninitiated, membrillo is a sweet, tangy spread that’s made simply with quince (a relative of the apple) and sugar and a little lemon juice in there to keep its color. It can be formed into bricks that can be sliced and served with cheese-especially manchego.

Now, replace the quince with guava and you’ve got this incredibly bright, sweet, soft, nearly spreadable “paste” you serve alongside cheese at your next soiree. Or your next afternoon tea. Or wine hour. Cut the paste into cubes for easy eating and stacked next to an appropriately savory cheese.
