Jijona Turron Almond Nougat from Spain

Turrón–also known as nougat in other languages and lands–is one of Spain’s treasured confections with a loyal following. There are many variations, but they’re not all created equal. After years of looking, we fell for this one made by Pablo Garrigós Ibáñez in the town of Jijona. They hand select and roast the most flavorful Marcona almonds they can find, then they coarsely grind them, mix it with orange blossom honey, sugar, and egg whites to hold it all together.

The roasty sweet flavor of the nuts combined with the floral character of the honey creates a rich, crunchy, satisfying experience that falls somewhere between a candy bar and a cookie. Unlike the fruity almond flavor of marzipan, this turron is dark and toasty, with a flavor kind of like if a creme brulee was made of almonds.
