Kansas City Canning Company has found a way to preserve peak summer flavor in a jar. Green tomatoes are picked before they’re fully ripened, so they’re firm, tart, and perfect for pickling. Whole, thick slices of green tomatoes are stacked in a brine with garlic, onion, and spices.
They have the brightness of a pickle with the texture of a green tomato, so you can use them wherever you want a pickle, a tomato, or both! They’re my go-to for winter BLTs. Dredge slices in cornmeal and fry them for an appetizer. Chop them up for a relish or remoulade sauce. Or layer them on burgers and pulled pork sandwiches.
