Mateo and Andy Kehler of Jasper Hill Farm buy wheels of clothbound cheddar from Cabot and age them in their cheese caves in Vermont. Clothbound is the way cheddar was made originally, and cheddars aged in cloth have a complexity and length of flavor that’s unmatched by wax. The rinds are brushed with lard, and they have a beefy, brothy flavor. Aged at least 9 months, it’s a sturdy cheese with a complex, lingering finish.

Woods Apple Cider Jelly

Wood’s Cider Mill uses whole, hand-picked apples to make their cider: a blend of Russets, Baldwins, Spies and McIntoshes along with some wild apples that grow on their land. Cider Jelly is just concentrated cider with nothing added, no preservatives or sweeteners. This jar contains over two quarts of cider! It smells like caramelized apples and has a super smooth mouthfeel with a tart apple flavor.

Pair the two together and it’s like fall in New England. Bring the flannel blanket. It’s going to get cozy.
