At Zingermans's Coffee Company in Ann Arbor, we focus on sourcing and roasting individual coffee varietals. There's nothing wrong with good blends. We even do a couple. We just want most of our coffees to focus on the flavor of a particular bean that comes from a particular place. To highlight those flavors, we stick to fresh, whole beans—they're at their very best about one week after being roasted. Once you grind them the flavors start to break down, so grinding your beans at home is the most important step you can take to improve your brew.
