Comté is France’s most renowned mountain cheese. These wheels are selected for us by Essex Street Cheese Co. from the caves of legendary affineur Maison Marcel Petite. Where our classic take on Comté is aged for about a year and has a buttery flavor with notes of hazelnuts and bone broth, these extra aged wheels are matured for an extra six months, until they clock in at around 18 months old. The extra time intensifies the flavor, giving it a slightly firmer texture and a flavor that pushes toward more powerful, savory notes.

Getting the extra aged wheels is no easy feat. For starters, not every wheel of Comté has what it takes to age that long—many peak when they're much younger, and if those ones were aged 18 months they'd be dry or funky or otherwise not great eating. The very few wheels that have extra aging potential are nearly always spoken for. This holiday season we managed to get our hands on three precious, delicious extra aged wheels. If you're considering getting a wedge, don't sleep on it. They're sure to sell quickly.
