Maffé sauce is a regional specialty in West Africa, a blend of fresh ginger, garlic, peanuts, chiles, lime juice, and tomatoes. It tastes amazing. Made by Jainaba Jeng, a Gambian expat. "It's known by many different names depending on where you are," Jainaba told me. "It's one of those sauces you make on Sunday, then use in dishes all week long."
It's easy to add into your dinner rotation. Try simmering chicken, pork, fish, or tofu in the maffé and serve over rice, couscous, or pasta.
