Tapping Reeve Cheese from Arethusa

In the rolling Litchfield hills in western Connecticut, Arethusa Farm is home to a herd of some 400 cattle: Jerseys, Brown Swiss, and Holsteins. The team at Arethusa use the herd’s milk to make a slew of acclaimed cheeses. 

Their Tapping Reeve has the sweet, fruity notes of a mountain-style cheese with the sharp tang and crumbly texture of a cheddar. Great for snacking, grilled cheeses, or as part of a full-flavored cheese plate.
