It’s rare to find vinegar made from vermouth because it’s a longer, more expensive process than making regular wine vinegar. But the extra effort yields a unique condiment that captures the herbal, fruity essence of this favorite Spanish tipple.

The process begins by making vermouth, a bittersweet fortified wine infused with herbs, spices, and botanicals. To make this vinegar, the Badia family and their team slowly ferment the vermouth using the Shützenbach method, which creates smooth, delicate flavors. Finally, a little bit of the wine and grape must is added in before it’s aged for a year in French oak barrels. The aging softens and balances the flavors, delivering a bright, lively vinegar with a sweet finish, a bit reminiscent of a balsamic.

A dash of vermouth vinegar adds a complex depth of flavor, so I often substitute it for red wine vinegar to elevate dishes from humdrum to stellar. Perfect for
marinades, vinaigrettes, and drizzling over fish or roasted vegetables.
